Warum wir brauen, wie wir brauen

Why we brew the way we brew

Craft Beer out of passion.

We are three brothers from Köttmannsdorf in Carinthia. Growing up between the Karawanks and Lake Wörthersee, with a deep connection to the landscape and to things made by hand. For us, beer was more than just a drink from an early age. It was a craft we wanted to understand. Not just to brew any old beer. But to brew the best beer possible.

Brewing Art.

The term "Brewing Art" appears frequently on our website. It’s not a marketing term, but a philosophy.

For us, art means: every decision in the brewing kettle has consequences. Which hop variety? When to add it? How much? The answers to these questions determine whether a beer is just good or if it creates a moment you won’t forget.

Craftsmanship means: No shortcuts. Small batches, careful processing, honest ingredients. We choose not to brew on an industrial scale.

Hops as a passion

It is the hops that fascinate us the most.

Styrian Wolf from the Slovenian region of Štajerska, barely 50 kilometers from our home village, wild and floral. Citra from the American Pacific Northwest. Nelson Sauvin from New Zealand, which smells of white grapes and gooseberry. Each variety has its own aromatic profile, each combination a new possibility.

We like to experiment, not for the sake of experimenting, but because we want to know what is possible. What happens when you brew a New Zealand lager hop into a pilsner? What does a double dry-hopping do to a New England IPA that is already intense on its own? These questions drive us.

Carinthia, landscape, roots

Carinthia is not just our home. It is the reason why we brew the way we do. The landscape here is tangible: the Karawanks as the border to Slovenia, the meadow orchards on the Plöschenberg, Lake Wörthersee in the summer. We grew up here and have a connection to nature and to the idea that good products come from good raw materials.

This is reflected in our beer. The Ribisco, our non-alcoholic fruit sour, thrives on organic red currants from Austria. The "Zwergohreule" (Eurasian Scops Owl), our double IPA, is brewed with Styrian Wolf. A hop that was bred in the border region between Carinthia, Styria, and Slovenia, just like the rare owls that live here, whose name the beer bears.

Why the can

Many associate cans with mass production. We see it differently and have deliberately opted for the can.

The decisive reason is the beer itself. A hermetically sealed can lets neither light nor oxygen reach the beer. For our IPAs, which derive their value from volatile hop aromas, this is not just a detail. It is everything. A beer that stays fresh in a can cannot lose any of what we put into it during the brewing process on its way to you.

Furthermore: aluminum is the most recyclable of common packaging materials. A can travels more easily, takes up less space, and generates less CO₂ during transport. For us, this fits our philosophy.

And then there is the artistic aspect. Each of our cans is a picture. The crested quail with its black feathered crest, the "Vogelfrei" with its artfully intertwined feathers, the scops owl with the three little owls from the Karawanks. We believe that packaging is part of the product, and that a beer brewed as a work of art deserves to look like one, too.

Awards as a benchmark, not a goal

Winning the World Beer Award Gold as Country Winner Austria for the "Schnepfenstrauß" in 2023, and securing two further silver medals for the "Schopfwachtel" and the "Vogelfrei" in 2025, means a lot to us. Not because awards were the goal. But because international experts have confirmed what we feel ourselves: that we are on the right track.

93 points from Falstaff for the "Schnepfenstrauß" and the Ribisco. Gold at the Untappd Community Award for "Schnepfenstrauss", "Schopfwachtel", and "Vogelfrei".

What comes next

We are a small brewery. Three brothers, small batches, a lot of manual labor. That will not fundamentally change, because it is exactly what defines our beers.

In addition to our core beers, we continue to experiment and bring limited and seasonal special brews to you. With new hop varieties, new styles, and new collaboration partners from the Austrian and European craft beer and creative scenes. Zichovec from Prague, First Craft Beer from Budapest, Wappler, Kein&Low and Hanf&Hopfen from Vienna, Schwarze Rose, BrewsLi, and Liquid Story from Germany. More great partners will follow. Every collaboration brings something back that ends up in the next beer.

Brewing Art doesn't end. It evolves.
